- 1 lb. black cod tips
- Few tbs. of olive oil
- Orange zest
- Sea salt & pepper, to taste
Zest a orange into olive oil and let sit while you prepare the fire. Start a wood fire in either a grill or fire pit. Let coals burn down and arrange them 3-4 inches below the grill grate. Pat black cod tips dry and season with salt & pepper. Oil cast iron pan or the grill and let it warm. Rub black cod tips with orange zest and olive oil mixture. Grill over mesquite or hickory wood until cooked through or until flakes easily. Put lid on grill as it cooks, or put the cast iron directly in the coals to infuse a smoky flavor. Serve on their own, in a salad, or with rice.
