Linda's Grilled Black Cod Tips

Ingredients
2 pounds black cod tips
¾ cup orange or pineapple juice
¾ cup soy sauce
2 tablespoons ketchup
1 tablespoon lemon juice
1 tablespoon brown sugar or maple syrup (optional)
1 tablespoon sesame oil
½ teaspoon pepper (or to taste)
¼ teaspoon ginger (or 1 teaspoon grated fresh ginger)
2 cups Jasmine rice
Preparation

Step 1 Create Marinade
Mix the pineapple juice, soy sauce, ketchup, lemon juice, brown sugar, sesame oil, pepper, and ginger.

Step 2 Marinate
Marinate the black cod tips under refrigeration for at least 2 hours, preferably up to 6.

Step 3 Grill
Grill tips for 3 to 5 minutes per side over a HOT fire.

Step 4 Serve
Suggested serving with jasmine rice and a salad of cucumber with seasoned rice wine vinegar.
