Makes 3 servings
- 1.5 lbs. halibut fillets
- 1 lb. asparagus
- 4 tbs. olive oil
- 1/4 tsps of salt
- 1/4 tsps of black pepper, cracked
- 6 cloves of garlic, minced
- 1/2 cup parmesan cheese, shredded
- 2 tbs. fresh parsley, chopped
Preheat oven to 400 degrees F. Line a baking sheet with parchment paper. Place halibut in the middle of the baking sheet with asparagus around it. Brush both the halibut and asparagus with olive oil and generously sprinkle salt and cracked pepper. Spread minced garlic on top of both. Top with both with parmesan cheese. Bake for approximately 15 minutes until the halibut is cooked through and flaky. Finish off with some freshly chopped parsley. Enjoy!
